Mixing Ratio: 225g Seasoning : 23.5kg Meat Block (14kg Pork / 9.5kg Beef) : 1L Water
Combine 225g of Spice Mix with 14kg of pork shoulder, 9.5kg of beef trim, and 1 liter of ice water.
Mix thoroughly until the liquid is fully absorbed and the meat becomes sticky.
Add any optional extras (like cheese or garlic) at this stage before filling casings.
